I did a bit of reading and had a couple of false starts but I managed to make my own sourdough starter from scratch - and then went on to make some wonderful bread.  What a joy!

That starter is now a pet living in a jar in my fridge.  Three jars of it have now gone on to live in the fridges of two friends and my sister - I'm waiting to hear how their first sourdough baking turns out. 

I also dried and flaked and kept a few spoonfuls of my starer in an airtight jar at the back of a cupboard "just in case".

I've been baking with wholegrain spelt flour for the past week or so - I came across a three minute recipe which is a no-kneeding, no-rising loaf with sunflower and sesame seeds which tastes amazing (it does use packet yeast, though).  [Also a really rich and moist spelt flour carrot cake which I'm working on reducing the fat content of by using prune and apple purees but that really is off-topic.]

I read somewhere that spelt makes a good sourdough and started a spelt only starter yesterday - I hope my eyes weren't decieving me when I spotted some bubbles today before feeding time Smiling

I usually bake on a stone (in an electric fan oven) and don't have dough baskets and wonder if I'm setting myself up for some trouble with spelt dough.  We'll just have to wait and see, I guess.

I'm glad to have found this website, hope you don't mind me whittering on like this.

Whittering on? :D Have you seen the way we go on and on about our breads? Sourdough is The Best food discovery for me and mine.

2 things you've done which I haven't. 1. Make your own starter 2. Dried and flaked it. Oh...I think it's 3....3. Make a full spelt starter. Hats off to you.

Looking forward to seeing your breads. I've a feeling you won't mind reading our whole spelt thread.
